    Cooking for 100 people overnight ! Here’s my setup: 3 briskets (45 lbs) on the @pittsandspitts Maverick 1250 and 6 pork shoulders (52 lbs) on the @yodersmokers YS 1500 . I Put them all on about 9 pm to finish for a 6 pm eat time . Temp on the pits is 250 . I am using the @thermoworks Smoke to monitor pit temps and the Fireboard to monitor the food temps . I prefer the smoke to monitor the pit temps . . .
